WHAT YOU’LL NEED
½ head red cabbage (approx. 250g), thinly shredded
2 carrots, sliced, using a mandolin if you have one
2 celery sticks, thinly sliced
1 large red onion, sliced
A handful of chopped soft herbs - coriander, curly leaf parsley or dill.
Juice and zest of 1 lemon
250g shop-bought mayonnaise
2 tbsp cider vinegar
1tsp celery salt
PREP & COOK
- In a large bowl, whisk together the mayonnaise, lemon zest and juice, cider vinegar and celery salt, then season generously.
- Add the cabbage, carrots, onion and celery. Mix well, coating the vegetables in the dressing, and refrigerate.
- Just before serving, add the chopped soft herbs to taste.
